VALTER MLEČNIK
The Mlečnik Organic Farm is engaged in traditional and environmentally friendly farming, winegrowing and winemaking. It was among the first Slovenian farms to begin applying organic farming principles in a period when there were no certificates or standards as we know them today. Since 2005, the entire farm is included in the biological control system, which dictates strict regulations regarding the methods and substances used in every phase of winegrowing.
The Mlečnik family believes in the principle that genuinely natural wines can only be achieved by understanding life and its natural processes. Thus, no artificial substances and other modern mechanical procedures are used in their wine cellar. Having matured for two years in wooden barrels, the wines are bottled without being filtered, which gives them an exceptional taste and bouquet. The Mlečnik Farm is well-known among winemakers, not only at the local level, and its wines are very much in demand. The family is happy to organise the tasting of their wines and other products by prior arrangement. Beside wines, the farm offers seasonal vegetables, bamboo sticks, which can be cut to the desired length, as well as spelt and spelt flour. |
VOJKO MOZETIČ
The farm has been making wine for fifteen years. It offers fresh red and white wines, either draft or bottled, suitable for every occasion: to complement meals or for enjoyable moments in good company. The wines are made using traditional methods that preserve their natural characteristics and quality. They are also excellent for cooking, and can be bought at
the farm or delivered to your home. Tasting events are possible for groups of 10 to 15 people by prior arrangement. |
CELLAR SONCNI SKOL
Farming, winegrowing and winemaking
“Sončni Škol” is the name given to the location of the vineyards in Šmarje na Vipavskem where, thanks to the constant presence of wind, there is little need for the use of pesticides. “Škol” means a rocky hill in the local dialect, while the adjective “sončni” (sunny) denotes the southern aspect of the vineyard. The wines, all of superior quality, mature in a cellar located in Oševljek. Local varieties, such as Pinela, Klarnica and Ribolla Gialla, have received numerous awards. Other varieties include Sauvignon, Pinot Noir, Barbera, Cabernet Sauvignon, Cabernet Franc and Refosco. The tasting and purchase of wines, accompanied by some home-made cold cuts, are possible every day of the week (groups of 10 to 15 people) by prior arrangement. |

This young family began growing wine grapes ten years ago, when they first planted a Pinot Gris vineyard next to their house. They have since continued step by On a hill above the village of Bukovica, their grandfather owned a small old vineyard in need of extensive renovation, so the family decided to plant a new and larger vineyard where Chardonnay and the local Vipava Valley variety Pinela would grow. The soil in the vineyard is heavy and marlaceous, preventing the vines from growing lush. Their growth is therefore modest and they do not bend under the load of grapes. However, the fruit they bear is much sweeter. The berries are golden yellow, some of them even reddish, and full of sugar. The grapes are harvested late, in the phase when they are already overripe. This is reflected in the wine, which is characterised by a high alcohol content and complex bouquet. Beside three single-variety wines, the family also produces a cuvée made from Ribolla Gialla, Malvasia. In the future, they plan to grow old organic cereals, such as spelt, buckwheat and oats. The family would be happy to welcome you by prior arrangement and let you taste their wines and home-made dishes.
